Grilled Turkey Mustache
Enjoy the outdoors while you prepare this savory recipe for Grilled Turkey.
For best results use a fresh (unfrozen) turkey. Plan ahead. Your local butcher, Wegmans, Fresh Market, and Whole Foods are all great sources for fresh turkeys. The butcher is also a great place to accomplish step one below.
1) Split your turkey down the middle. In between the turkey breasts with a large sharp knife. You will need to get through the breast plate. Butterfly or lay the bird all the way flat. This is also called a "spatchcock". https://www.youtube.com/watch?v=hZxWF0VyK60
2) Grab your favorite poultry spice, cajun seasoning, or rib rub and do a full 24-72 hour dry salt brine. Badia Sazon Completa is one of my favorite rubs to use on Turkeys. 3) Let the turkey sit in your refrigerator covered with plastic or aluminum foil until it is time to cook.
4) Prepare your grill or charcoal to about 325 degrees. For a more smokey flavor and a pink smoke ring add dried hickory, rosemary, and garlic to the smoke box or charcoal.
5) Cook until the turkey measures 165 in the breast. The legs may measure 173 or more at this point.
6) Let the turkey rest for 10 minutes or more before you attempt to cut or break apart.
7) If done properly your skin will be super crispy and flavorful. The meat will have a pinkish hue around the edges. The flavors will penetrate all parts of the turkey.
8) It will taste so good your guests will be inspired to do a turkey mustache.
